One of Ashleigh Wilson’s favorite foods is vegan waffles!
Who doesn’t love a waffle?! In our home, waffles are almost a daily morning ritual, especially with our 4.5 year old son! If we have limited time due to our busier schedule with a 5 month old baby, we love using the Simple Mills Almond Flour baking mix for pancakes and waffles. https://simplemills.com/Shop/Product/Pancake-Waffle-Mix.aspx. We love that it only has 7 ingredients, is gluten free, non-GMO, and that it is tasty both as waffles and pancakes. For our son, we always add some sort of fruit (blueberries, strawberries, raspberries, blackberries, mango, pear) as well as bacon, which he loves!

We tried this waffle recipe the other day and loved that it used rolled oats. (As a nursing mama, I have read that oats are a great food to help with milk supply).
